This year we decided to try out a crop share. A crop share is community supported agriculture where local farmers partner together & deliver fresh fruits, veggies, meats & even eggs straight to your house.
We are trying the fruits & veggies and they are so delicious! It has really made us think about the menu for the week, do some prep work on the weekends, and cook up our yum yum vegetables!
I must say that I have come around (Ross - brace yourself & grab a trash can) to eating squash & zucchini! These are two vegetables that have always made my brother & I cringe. However, we cooked them in a veggie lasagna which was out of this world (we cooked it in a 9x13 pan). We cooked squash/zucchini cakes (straight from paula dean)!
Graham has also tried a variety of the fruits & veggies. Fruits - no prob! Veggies - let's see. He ate eggplant (ross, so did i)...we made eggplant parmesan & they came out like little pizzas! G LOVED it and so did we :)
I even experimented with canning. We got quite a few banana peppers. I like these best on pizza, subs, salads & with sliced cheese. So, I canned them with some vinegar...we'll see how they turn out.
I wanted to share our adventure in summer fruits & veggies!
I am sure going to miss the fresh garden variety delivered straight to the front door every week!
